difficult to make. There is no cooking involved. You “cook” the fish in freshly squeezed lime juice. I’ve made it with both shrimp and whatever fish catch of the day looks best. The key is the seafood must start raw and very fresh.
Alternatively, if your bro isn’t a seafood guy, maybe just make some good guacamole and some fresh pico de gallo (or buy some good salsa)? I sometimes add pieces of fresh juicy sweet mango into my ceviche and pico de gallo. The little yellow mangos are best and are in season right now.
Serve any of these with good plain tortilla chips.
