Yesterday, we had another example of what my family refers to as "<family surname> family luck", which is always bad (but not REALLY bad). Tomorrow I will be attempting to make a low sodium version of the infamous green bean casserole. No sodium green beans aren't an issue. I found some lower sodium french fried onions for on top. And Campbell's is now making an unsalted cream of mushroom soup, which quite frankly is pretty tasteless and awful. I don't recommend it unless you *have* to cut sodium from your diet. It also has virtually no mushroom pieces in it. That being said, it can be made somewhat palatable with a LOT of herbs and seasoning added. I also bought some mushrooms at the grocery store Sunday night to add to the soup. I've only recently gotten to the point where I can tolerate, but don't really LIKE, mushrooms.
Here's where the family luck comes in...my dad's sister is going to Tennessee with her kids, kids-in-law and grandkids for an extended Thanksgiving gathering. She stopped by yesterday to bring me some things she had in the refrigerator that she thought might spoil; she didn't want them to go to waste. My bounty included several tomatoes, a nice avocado (which yay--I love avocados but rarely buy them both because they're expensive and because I either try to eat them when they're underripe or I wait too long and have spoiled avocado)...and yes, a BIG container of mushrooms. So if anyone needs mushrooms and wants to make the long drive out to my neck of NE Ohio, you're welcome to come over and get some. Heck, I'll even throw in a tomato or two!
