Moonlighting has a very short S1. The chemistry between Maddie and David is as amazing as everyone says, but the cases they're investigating are boring me...going to check out S2 and hope the cases improve...(I have NEVER seen this one before so please be very careful about any even potential spoilers).
Home Economics, after a meh S1, had a great second and third season. I love Casey Wilson, so I would have loved a fourth season where she was on more. Most of the story is resolved with a very small twist that would have been for a fourth season, but it's nothing big that would have people throwing things at the wall or anything.
