My mom always used the Pepperidge Farm cornbread crumbles (and I hated her dressing, lol, it came out like a brick), never the cubes. The Pepperidge Farm cubes and most other commercially available cubes are hard like croutons, but the Martin's was more like bread that had been cut up a few days prior. So a little bit stale but not hard. Perfect for making stuffing.

I've had to cut up a loaf before to make it and it's mainly just annoying and takes time. There's a few grocery stores that offer cubes in their bakery but I haven't found any that are potato bread, which the recipe specifically calls for. And which is of course ridiculously expensive IMHO.
