I'm supposed to work tomorrow but Mr. Kris may need to go into the office and the schools are closed so I may stay home. I'm not upset about that, my right knee has been aching the last day or two (maybe the weather? or I slept with in in a funky position?). But we'll see. Today they closed the county buildings and he teleworked, so he probably could do that tomorrow with little issue.
Aw, I hope your knee feels better soon!
It stopped hurting yesterday so I'm blaming the weather.
And on another note, I made lasagna with bechamel sauce for the first time today. I usually use ricotta but I forgot to buy it. It was fine, though I think I should have put more cheese on top. I forgot to look at the recipe as to how much it needed. The bechamel recipe also made a TON - I was kind of irked, it took 6 cups of milk and I absolutely didn't need that much, I had at least a cup of bechamel left over. I'm going to add cheese and make mac and cheese with it.
Funny you mention this...my morning routine the last few months has been to scroll through stories on my phone right after I wake up. And one of the stories earlier today was "For the best lasagna, do THIS". Yep, the "this" was "replace the ricotta with bechamel sauce". I was wondering if that was some sort of huge improvement but from the sound of your experience, it wasn't? I mean, not bad but not the be all, end all of lasagna.
I have had some frozen lasagna made with bechamel and it was really good, so I think it was maybe this recipe - I do think it needed way more salt and pepper and probably added in earlier than the recipe said. I may have also made it a little too thick. But yeah definitely didn't need 6 cups of precious milk in a snowstorm, lol.
