When it comes to eggs, I tend to stick to scrambled eggs or hard-boiled eggs. I'm not even particularly good at omelets.
But I don’t see why Italian sweet sausage can’t be used for a perfectly yummy breakfast. Even if you want to make it into a patty and put it on an egg sandwich, why not? Chorizo is used as breakfast sausage in Mexico.
Of course you can use sweet Italian sausage to make breakfast foods. That's what I told Dad. But the recipe I'm trying (I now plan to make it tomorrow for lunch) is brand new to me, and I'd like to make it *exactly* as written the first time. After that, I might experiment.
Don't worry...I *promise* the sweet Italian sausage isn't going to go to waste. Not in this household <g>. Dad may have never put tartar sauce on veal parmesan like HIS dad did, but he's mixed together some pretty interesting leftovers himself. I actually mixed some of the sausage with the last of the spinach in the fridge, plus the last of the ricotta cheese, and a dash of grated parmesan and filled some cooked pasta shells. That was lunch both yesterday and today.
