to be refrigerated in the refrigerator. Our refrigerator isn't particularly big, and it was already crammed full of the usual stuff, plus a pan of ding dong holiday potatoes, extra veggies from making the veggie pizza* and the fixings for mac and cheese later in the week. Last night, I had to find room for a container of lasagna, meatballs and Italian sausage, a container of goat cheese bites and prosciutto wrapped around mozzarella and a container of leftover (not many, so yay!) caprese skewers and rolled up salami appetizers. Oh, and a couple slices of French silk pie.
* my holiday cooking this year seemed to be all about either having way too much of an ingredient or not enough of an ingredient. I didn't buy enough sour cream (I used it for both the ding dong holiday potatoes and the veggie pizza, and I'll need some for the mac and cheese) or cheddar cheese. I used up all the peanut butter I'd bought for making peanut butter candy and had to dip into Dad's stash...and promptly used it all up (or so I thought--I bought him more on my emergency ingredient run yesterday and then found a jar in the cupboard). And I needed more cheese for the veggie pizza. OTOH, I couldn't find a SMALL container of whole milk for the mac and cheese and Kelloggs apparently only sells family size boxes of cornflakes (which go atop the ding dong holiday potatoes) in my neck of the woods, so Dad will be eating cornflakes until February. And of course I had to buy a "usual" amount of the various veggies for the pizza and then only used between a third and a half of the bag or bunch or whatever. I guess we're all set for the vow to eat healthier in the new year <g>.
