with plenty of sugar. Now I prefer them with a sharp cheddar cheese but I also love good grits dressed simply with butter and black pepper.
I made the one that my daughter, son in law, and I love... covered in a huge layer of pecans, coconut, and brown sugar on top. It is to die for. My daughter has been making it for about 20 years but this year she decided she was doing deviled eggs instead. I was glad to have a break from peeling eggs and making the casseroles was fun.
That sounds amazing! I don't believe I've ever seen a sweet potato casserole topped with coconut but I'm all for it!
But my weirdo husband does not eat pecans, or coconut... and my mom and younger granddaughter like the kind with pineapples and marshmallows so I made one of those too. I used marshmallow cream on top instead of mini marshmallows and it looked amazing!
I've also never seen a sweet potato casserole with pineapple in it <g>. I thought sweet potato casserole was pretty much sweet potatoes, a touch of brown sugar, and tiny marshmallows on top. But a version with pineapple in it also sounds yummy (guess I'm just not that picky about my sweet potato casserole <g>).
I am one of those strange people who think pretty food tastes better.
Not strange. The professionals often say you eat with your eyes first. Which conjures up a very disturbing visual...
We ended up with exactly 40 people (according to my husband's math)... 41 if you count the dog who visited with his family... I dare not try to count as they all keep moving and making me lose my count... My quick mental math right now tells me that of those 40... 14 are under the age of 18... which explains why it felt like many more than 40.
Hokey smokes...that is a LOT of people (and the dog totally counts).
I got in the bed around 11 last night. Exhausted. Just got up and started another load of laundry and another load of dishes. Hopefully, me the dishwasher and the washing machine survive the day. I have decided that the day after Thanksgiving for me... instead of Black Friday is Reassembly Day. Trying to put my house back in order after the slightly organized chaos.
I hadn't even thought of all the CLEAN UP. I hope you got some help with that last night. On an only semi-related note...I have the worst timing when it comes to being at someone's house for a party. I promise I don't do this deliberately but by the time I think to ask "is there anything I can help with?", everything is done. I always feel guilty about that.
On the bright side... I am having pumpkin spice coffee and leftover pumpkin cheese cake for breakfast... so life is GOOD : )
A FINE breakfast! I opted for a breakfast burrito. For some reason, ever since the bindery shut down and I've had more time on weekday mornings, a breakfast burrito on Friday morning has become habit for me.
